
Waiter / Cocktail waiter
Location: Covent Garden
Hours/Days: 20 hours or 40 hours per week (includes weekends).
Salary: From £16.88 per hour, (£11.78 basic + £5.10 tronc)
Shift Patterns: Earliest start 6.30am, latest finish 1am.
Overview of Role
Waiters are experts of the food & beverage world, exhibiting warm hospitality and moving in service with purpose and efficiency. They have strong organisation and prioritisation skills and are able to manage all guests requests while simultaneously directing the Assistant Servers and Kitchen Servers in executing a flawless service.
They are responsible for maintaining the same level of food knowledge amongst themselves throughout all of the outlets, knowing all ingredients, preparations, allergens and possible modifications for all dishes produced in the kitchen, alongside knowledge on classic cocktails and major grape varieties and wine producing regions.

Main Duties & Responsibilities
The main responsibilities of the Waiter are summarised below, the list is not exhaustive:
- Waiters are responsible for greeting and communicating warmly with all guests in the space. They deliver beverage and food menus, process orders into Micros and maintain a high standard of service throughout a guest’s visit. They know all well spirits and spirit brands featured in our bars. They can speak to the structure of our food and cocktail menus, ingredients, methods, allergens and presentations of all dishes and drinks served.
- They know all our wines by the glass on offer and can discuss major wine regions, climates, terroir and styles of wine, making confident recommendations. They are well-versed in wine service protocols and glass pouring levels. They have an elevated knowledge of beer and cider styles around the world in addition to our beers on offer.
- Waiters set up the floor for service, ensure waiter stations are well stocked and all tools needed to execute service are available. They are responsible for maintaining glassware and assisting in any reasonable tasks as directed by the business needs.
- Waiters must be able to explain and discuss all food dishes and beverage options, as well as have a full understanding of traffic patterns, position numbers, section plans, and working with the team on site to deliver an informed and expert service to all guests.
- Follow any other reasonable requests and instructions from F&B Management where appropriate.
